Non-GMO (Satureja hortensis) Summer Savory plants grow as warm annual herbs reaching up to 1" high. This variety of savory produce from late spring through summer. Once plants reach maturity, Summer Savory develops slender lime-green piquant leaves “providing a fresh and peppery aroma with flavor similar to thyme. Savory grows until hot conditions set in. The whole savory plant can be harvested prior to their buds fully opening. By mid-summer, Summer Savory blooms light-violet flowers as they go to seed.
As the lime-green leaves of Summer Savory are used to flavor soups and salads, there are a variety of dishes that this piquant herb is cooked with as a seasoning similar to thyme. Summer Savory can be used as a dry ingredient in the popular herbes de Provence mixture, this minty leafy green can be crushed and cooked with meats or used as an alternative to parsley!
